How to make it
Method
-
Prep
Preheat the oven to 350°F and line a 12-cup muffin tin with sturdy paper liners.
-

Make and pre-bake the crust
Mix the graham crumbs and melted butter until it looks like wet sand. Press a heaping tablespoon firmly into each liner with a small glass. Bake 5 minutes, then drop the oven to 300°F.
-

Make the filling
Beat the cream cheese 1 to 2 minutes until light and fluffy, scraping the bowl. Beat in the yogurt, then the sweetener and protein powder until smooth. Add the egg and beat only until no streaks remain; overmixing causes cracks.
-
Fill and bake
Pour the filling into the crusts, almost to the top. Bake at 300°F for 18 to 22 minutes, checking at 10 minutes, until the edges are set and the centers still jiggle slightly.
-
Cool slowly
Turn the oven off and leave them inside with the door ajar for 15 minutes, then cool on a wire rack to room temperature, 30 to 45 minutes.
-

Chill
Refrigerate at least 4 hours, ideally overnight. Peel off the liners to serve. Keeps up to 5 days in an airtight container in the fridge.
