How to make it
Method
-

Scramble and cool the eggs
Heat 1 to 2 tbsp oil over medium heat. Whisk the eggs, pour them in and stir rapidly into tiny clumps. Cool completely; hot eggs make steam and soggy wrappers.
-

Prep the chives and noodles
Wash and dry the chives thoroughly, then cut into 1/2-inch pieces. Soak the vermicelli in boiling water 2 to 3 minutes, drain very well and chop into small pieces.
-

Mix the filling
Toss the chives with 1 tbsp sesame oil first so the oil seals them before any salt touches them. Then add the eggs, noodles, remaining sesame oil and seasonings. Divide into 8 portions of about 1/3 cup.
-

Wrap twice
Dip one rice paper sheet in room-temperature water for 2 to 3 seconds; it should still feel slightly firm. Add a portion, fold the bottom up, tuck the sides and roll into a tight square parcel. Dip a second sheet and wrap again, seam side down. Use two sheets per dumpling to hold the filling.
-

Air fry
Preheat to 375°F (190°C). Oil the dumplings generously and space them so they don't touch. Cook 5 minutes, flip, re-oil any dry white patches and cook 4 to 5 minutes more, until puffed, golden-blistered and rigid.
-

Rest and serve
Rest on a wire rack 1 to 2 minutes so the bottoms stay crisp. Slice in half and serve hot with the dipping sauce.
