A little time in the kitchen

The filling is the reason to make these. Black sesame paste and sesame protein powder fold into softly whipped cream, giving the pancakes a rich, nutty center.

Keep the pan heat gentle and cover it as they cook. The outside should be golden while the middle cooks through, ready for that sesame cream.

Soft peaks. Gentle heat. Fill the center.

How to make it

Method

  1. Whip the cold cream

Whisk the cold heavy cream to soft peaks. In a separate bowl, combine the black sesame paste and sesame whey. Stir in the 4 teaspoons of milk until smooth.

  2. Fold a light sesame filling

Stir 1 tablespoon of the whipped cream into the sesame mixture to loosen it, then gently fold in the remaining cream. Refrigerate while you cook. That tablespoon comes from the measured cream, not an extra amount.

  3. Mixing the protein pancake batter

    Make the pancake batter

Whisk the protein flour, baking powder and sugar replacement. Mix the milk, eggs, melted butter and vanilla separately, then combine just until no dry flour remains. Rest for 2 to 3 minutes.

  4. Cooking golden pancakes gently in the pan

    Cook gently under a lid

Lightly grease a nonstick pan over low to medium heat. Divide the batter into six equal portions. Spoon into the pan to make 4- to 5-inch pancakes, cooking in batches. Cover and cook until bubbles appear and the edges look set. Flip, cover and cook the second side for about 2 to 3 minutes, until the center is cooked through.

  5. Filling a cooked pancake with black sesame cream

    Fill the center

Rest each pancake for about 60 seconds. Transfer the chilled sesame cream to a piping bag fitted with a narrow filling tip. Insert the tip into the side and fill the center gently, dividing the cream evenly among the pancakes.

  6. The completed black sesame pancakes with dark cream at the center

    Stack and serve

Serve the filled pancakes just warm. The cream should stay tucked in the center. Refrigerate any leftovers promptly; warm gently so the filling does not melt out.
