Allow about 10 minutes to mix and shape, then 9 to 10 minutes in the air fryer. Small baskets need two batches.

A little time in the kitchen

Greek yogurt brings this dough together. Matcha whey gives it that tea flavor, and a quick trip through the air fryer sets the outside while the middle stays soft.

The dough is sticky. Wet hands make shaping much easier, and a rough, rustic ball is exactly what you want.

Soft in the middle. Matcha all the way through.

The small things that matter

Good ingredients.
A better finish.

1

Weigh the powder

Use 40g of matcha whey. Scoop sizes change, so a scoop from a different bag may not give the same dough.

2

Stop mixing early

Fold just until the dry flour disappears. The dough should look a little rough.

3

Give them space

Leave room between the bites. Cook in two batches if your basket is small.

What you need

Ingredients

The whole batch makes ten plain bites. The nutrition below counts five plain bites, half the batch. The sugar dusting and glaze are extra.

The plain bites

  • 60g / ½ cup
  • 6g / 1½ tsp
  • ¼ tsp
  • 40g
  • 160g / about ⅔ cup

Optional finish, counted separately

  • A light dusting
  • ½ cup
  • A pinch
  • ½ tsp, optional

Keep it sticky. Adding extra flour to make the dough easier to roll changes the texture and the numbers. Wet your hands instead.

You'll need: kitchen scale, mixing bowl, whisk, spatula, air fryer, basket-safe parchment

How to make it

Method

  1. Pouring matcha whey into the dry ingredients

    Mix the dry ingredients

Preheat the air fryer to 325°F. Whisk the flour, baking powder and salt together, then whisk in the matcha whey until the color is even.

  2. Folding Greek yogurt into the matcha dry mix

    Fold in the yogurt

Add the yogurt and fold just until no dry flour remains. Stop there. The dough will be sticky; adding extra flour changes both the texture and the nutrition.

  3. A rough ball of matcha dough in the palm of a hand

    Shape ten bites

Wet your hands, shake off the excess water and divide the whole dough batch into ten equal portions. Quickly roll into rough balls and place on basket-safe parchment. Re-wet your hands as needed.

  4. Matcha dough balls spaced out in the air fryer basket

    Air-fry

Arrange in one layer with space between the bites. Air-fry at 325°F for 9 to 10 minutes, until the tops look matte, feel set and spring back gently. Air fryers vary, so check the first batch before adding time.

  5. Dusting the cooked matcha bites with powdered sugar

    Rest, then finish

Rest in the basket for 2 minutes, then transfer to a plate. Enjoy plain, or add a light powdered-sugar dusting once slightly cooled.

  6. Pulling open a matcha donut bite to show the soft center

    If you want the glaze

Melt the white chocolate in 20-second microwave intervals, stirring between each. Stop when a few pieces remain and stir until smooth. Add the pinch of salt and optional matcha. Dip the cooled tops, let excess chocolate drip off and leave to set. This optional glaze is not included in the plain-bite nutrition.
