A little time in the kitchen

Matcha and cookies and cream work well together: the tea flavor in the soft crêpes, the little chocolate cookie pieces inside.

Cook the crêpes thin, cool them, then overlap three at a time. Fold in the sides before rolling so the filling stays tucked inside.

Thin crêpes. Cool filling. A short rest before slicing.

The small things that matter

Good ingredients.

Warm crêpes soften the whipped cream. Let them cool completely, then fill and chill the rolls for 15 minutes.

2

Measure the mix

Weigh the ingredients before you start so the filling and base come together as written.

3

Give it time

Allow about 15 minutes to mix and assemble, 20 minutes to cook the crêpes in batches, then 15 minutes to chill before slicing.

How to make it

Method

  1. Blend the batter

Blend the milk, eggs, flour and matcha whey until smooth. Rest for 5 minutes. The batter should be thin and pourable; add milk 1 tablespoon at a time only if needed.

  2. Cooking a thin matcha protein crepe in a nonstick pan

    Cook six thin crêpes

Heat a nonstick pan over medium-low to medium heat and lightly spray it. Pour a thin layer of batter and swirl to coat. Cook until set, then flip and finish the other side. Repeat for six crêpes and let them cool.

  3. Making the cookies-and-cream filling

    Make the cookie cream

Remove the cream from the two sandwich cookies. Crush the cookie wafers and gently fold them into the light whipped cream.

  4. Spreading cookie cream across overlapping matcha crepes

    Overlap and fill

Lay three cooled crêpes slightly overlapping. Spread half the cookie cream down the center, leaving space at the edges.

  5. Rolling the filled matcha crepes into a log

    Fold, then roll

Fold the sides in over the filling, then roll snugly into a log. Repeat with the remaining three crêpes and filling.

  6. Sliced matcha rolls with a cookies-and-cream center

    Chill before the first slice

Refrigerate the rolls for 15 minutes so they hold together. Dust with a little matcha powder if you like, then slice and serve.
