A little time in the kitchen

This is a rice-paper shortcut inspired by mochi, with a matcha protein yogurt center and chopped strawberries. No sticky rice dough to make.

Mix the filling thick, soften the wrapper briefly and fold it around the center. An hour in the freezer helps the parcel firm up while the inside stays creamy.

Thick filling. A quick dip. Keep the freeze short.

The small things that matter

Good ingredients.
A better finish.

1

Keep the texture

The filling should hold its shape. Add a tiny splash of water or milk only if the powder cannot be mixed in.

2

Measure the mix

Weigh the ingredients before you start so the filling and base come together as written.

3

Give it time

About 10 minutes to mix and wrap, then 60 minutes in the freezer. Serve after the short freeze rather than leaving it overnight.

How to make it

Method

  1. Mixing matcha whey into thick vanilla yogurt

    Mix the matcha filling

Stir 15 g matcha protein powder into 50 g vanilla yogurt until smooth. Let it rest for about 2 minutes, then fold in the finely chopped strawberry.

  2. Softening a rice paper sheet in water

    Soften the rice paper

Fill a shallow plate with room-temperature water. Dip one sheet of rice paper for 5 to 10 seconds. Lift it onto a clean work surface while it is still a little firm; it will keep softening.

  3. Spooning strawberry matcha yogurt onto softened rice paper

    Fill the center

Place the thick yogurt mixture in the center of the wrapper. Keep a clear border around it so the rice paper can fold over itself.

  4. Folding the rice paper edges around the filling

    Fold it into a parcel

Fold the edges over the filling and tuck the seam underneath. Handle it gently so you do not tear the softened wrapper.

    Freeze briefly, then enjoy

Freeze the parcel for 60 minutes to firm the center, then serve. Do not leave it overnight: the short freeze is what keeps the yogurt from turning into a hard block.
