The story

For a while, I thought eating for my goals meant chicken, rice, and broccoli. Meanwhile, my family was sharing real meals. Lok lak is one of the dishes that brought me back to my own food.

This version keeps the flavor where it belongs: garlic and pepper on the beef, cold crunchy vegetables, and a bright lime dipping sauce. The air fryer handles the beef. You keep the salad fresh and let the sauce do its thing.

This isn't just meal prep. It's coming home.

The balance

Pepper. Lime.
A little crunch.

1

The beef

Garlic, pepper, and a savory marinade. Give it space in the basket so the edges caramelize.

2

The sauce

Lime, pepper, salt, and garlic. Sharp enough to wake up every bite.

3

The crunch

Lettuce, cucumber, tomato, and red onion. Keep them cool until it is time to eat.

How to make it

Method

  1. Whisking the savory garlic and pepper marinade in a glass bowl

    Mix the marinade

Whisk the soy sauce, fish sauce, oyster sauce, wine if using, and neutral oil in a large bowl. Whisk in the brown sugar until dissolved, then the cornstarch until smooth. Stir in the pepper, garlic, ginger if using, and sesame oil.

If you want a finishing glaze, set aside 2 to 3 tablespoons of clean marinade now, before any raw beef goes in.

  2. Coating sirloin cubes in the lok lak marinade by hand

    Give the beef some time

Add the dry beef cubes and massage the marinade into every piece for 30 to 60 seconds. Cover and refrigerate for 2 to 4 hours. If you are short on time, give it at least 30 minutes. Take it out 15 minutes before cooking.

Keep the total marinating time under 8 hours.

  3. Lime-pepper dipping sauce with garlic and sliced chili in a white bowl

    Make the lime-pepper sauce

Whisk the lime juice, salt, and sugar in a small bowl until dissolved. Stir in the pepper, garlic paste, and chilies if using. Let it sit for 10 to 15 minutes, then taste and adjust the lime, salt, or sugar.

It should be bright and punchy. You only need a little with each bite.

  4. Caramelized beef cubes spaced across the air fryer basket

    Air fry in two batches

Preheat the air fryer to 400°F for 5 minutes and lightly spray the basket. Add half the beef in one layer, leaving a little space between pieces. Cook for 6 minutes, shake, then cook for another 4 to 6 minutes. Check the thickest pieces with a thermometer: aim for at least 145°F, then rest for 3 minutes. Repeat with the second batch.

For a glossy finish, toss the cooked beef with the clean marinade you set aside and air fry for a final minute.

  5. Adding crisp cucumber to the lettuce and tomato base

    Build the cool, crunchy base

Arrange the torn lettuce, tomatoes, cucumber, and red onion on plates or in meal prep containers. Keep the vegetables separate from the beef if you are packing meals for later.

  6. A finished container of beef lok lak held up with fresh vegetables and rice

    Bring it to the table

Set the hot beef over the fresh vegetables and serve the dipping sauce on the side. Add cilantro if you like. Take a lettuce leaf, add beef and vegetables, then a little sauce. Wrap it up and eat.

Rice is another way to serve it, as shown in the photos. Portion it to suit your meal.

Tomorrow is handled

Keep the crunch.

  1. Divide the beef into four containers and pack the dipping sauce separately.
  2. Keep vegetables cool and separate so they stay crisp. Refrigerate promptly and use within 3 to 4 days.
  3. Reheat only the beef until it reaches 165°F. Add the cold vegetables and sauce after heating.
